STATEMENT

Fermentation and microorganisms are rewriting the world.

We listen carefully to the voices of these living things.
Our lives are also theirs. Even now we are among countless living things.
When we can understand their way of looking at the world,
we can understand their feelings, and we will surely
be able to surpass who we have been until now.

The starting point for our exploration is Echigo, Japan.
The rice fields into which meltwater flows are home to
a rich rice ecosystem,
where countless soil microorganisms provide nutrients to
the rice and help it grow.
In the humid climate, the microorganisms that make
rice their home works vigorously,
brewing sake that can only be made on this land.
A land where many microorganisms and people
have worked together, communicating through
wisdom passed down from their ancestors.

We bring together technology from many fields to get to know these workers better,
to meet the many unknown faces out there, to become colleagues who work alongside us.
We attempt to have a dialogue with them through a variety of "techniques and sciences."
such as Ultra-efficient million microbial screening, next-generation AI-controlled
small-scale cultivation,multi-omics data analysis, biomass aggregation,
robotics, compost production, oil and fat production,
feed organism cultivation, land-based aquaculture.

With their help, we may be able to break through the walls the world is facing.
By humbly studying the rice cultivation and rich fermented food culture that
the Japanese have inherited, we will connect with the eight million lives.
Here in Echigo・Nagaoka, we will create a community base where people
who have realized the potential of microorganisms can gather from all over the world.
